Carrot cake and cupcakes

I woke up this morning in the mood for a fruity cake. After checking what ingredients I had in my fridge, I decided to make a healthy and nutritious carrot cake. The following ingredients will make one big round carrot cake and 6 cupcakes.

Carrot cake and cupcakes

Ingredients for the cake:

  • 5 eggs
  • 225 g flour
  • 5 g cinnamon
  • 5 g nutmeg
  • 10-15 g of baking powder= 1 packet of baking powder from the brand Royal
  • 250 g brown sugar
  • 1 carrot
  • 150 ml of sunflower oil (I didn’t have so I used olive oil)
  • Peel of 1 lemon
  • 2 tbsp of vanilla
  • 1 tbsp of salt

Ingredients for the frosting:

Frosting #1

  • 200 g butter
  • 350 g philadelphia creem cheese
  • 150 g mascarpone cheese
  • 175 g glazing sugar
  • 2 tbsp of vanilla

OR:

Frosting #2

  • 300 l cream
  • 250 g philadelphia creem cheese
  • 150 g glazing sugar

Procedure:

For the cake:

  1. Preheat oven to 180º C.
  2. Place the flour, cinnamon, baking powder and the nut meg in a bowl. This bowl will be called the flour bowl.
  3. Place the eggs in your robot and mix during 5 minutes at speed 8-10. Then add the brown sugar. When you stop hearing the cricking sound, it is correctly mixed together.
  4. Peel the carrot and blend with the sunflower oil until it has a puree texture.
  5. Place the carrot puree in your eggs mix. Mix in speed 2 for 5 minutes.
  6. Now start placing slowly your flour bowl ingredients in the egg mix. Mix in speed 2 for 2 minutes. Now add a little bit. Mix. Add more. Mix. Do this step in 5 slow flour incorporations.
  7. Add walnuts in your mixture. Mix.
  8. In your oven pan, grease butter all around and place a small layer of sugar.
  9. Place the mixture in your pan.
  10. Place in oven heated at 180º C during 35-40 minutos.
  11. Do the toothpick test to test if it’s fully baked. You place a toothpick and if it comes out clean it means it’s cooked.
  12. Now you can cut the cake horizontally half way through or you can serve it as it and add glazing sugar and walnuts. If you want to cut it halfway through you can add your frosting (see below) or honey or Nutella or any other spread you like.
  13. Before incorporating the spread wait until the cake cools down.
  14. Eat and INDULGE.

Frosting:

Frosting #1

  1. Mix the butter, add the glazing sugar, vanilla and mix well.
  2. Add the Philadelphia cheese in three incorporations.
  3. Separate your cake and place it in upper layer of your lower portion of cake. Now close the cake and place it in your upper layer of your upper portion of cake.
  4. Add chopped walnuts on top.

Frosting #2:

  1. Place the glazing sugar and the cream together and start mixing until you obtain a thin solution.
  2. Do forward and backward movements. These are called “vaivenes” movements in Spanish.
  3. Add the Philadelphia cheese. Do “vaivenes” movements.
  4. Separate your cake and place it in upper layer of your lower portion of cake. Now close the cake and place it in your upper layer of your upper portion of cake. When you place it you should also do “vaivenes” movements.
  5. Add chopped walnuts on top.
